Thursday, August 27th, 2009Loaded Twiced Baked Potatoes Recipe
Sunday, August 23rd, 2009Ingredients:
3 Lg Potatoes
3 strips of bacon, chopped
2 Scallions, chopped
1 Tablespoon of Parsley
1 Cup Shredded Cheese
1 Tablespoon Dijon Mustard
1/2 Cup Sour Cream
1 Teaspoon Garlic Powder
1 Teaspoon Salt
1/2 Teaspoon Pepper
1 Tablespoon Sriracha (Optional)
Chop bacon put in a pan with fresh cracked pepper and fry until crisp. Set aside with the grease.
Poke holes in the potatoes and microwave until done. I have a baked potato setting on mine, so not sure how long.
Cut-up scallions and parsley. When the potatoes are warm, but ok to touch, cut lengthwise in half and scoop out the insides and put into a bowl, leaving about a 1/4″ of potato in the skin.
Smash the potatoes, then mix in the scallions, parsley, bacon with grease, sriracha, dijon, sour cream, garlic powder, salt & pepper to taste.
Mix together really good.
Fill the skins with the potato mixture and spray pam or lightly brush with olive oil.
Freeze or put to the side until ready to bake.
Bake at 400 degrees for 15-20 minutes, or until lightly browned on top.

Sunday, August 23rd, 2009Enjoying my afternoon at home putzing around. oh yeah, I guess I kinda do that everyday ha. Had a crazy work week, so have taken this weekend off for the most part. Just did the dishes, I have ribs smoking in the smoker and going to start on my twiced baked potatoes so that I can just pop them in the oven later. Dave is out on the mower and prepping to install our new gravel driveway, woohoo.

Chile Relleno Pizza Recipe
Sunday, August 16th, 2009I was shocked today to not be able to find a Chile Relleno Pizza recipe on Google. How can that be? I thought you could find anything on the net. I gave up looking and got in the kitchen and created my own. It came out great. The eggs were a nice consistency, firmed up well. Here is the Pizza Dough Recipe that I enjoy most. The cornmeal gives it a nice bite.
1 Packet of Yeast
1 Cup of 100-110 degree temp Water
Soften yeast in water, let sit.
In a bowl, mix:
2 Cups Flour
1/2 Cup Cornmeal
1/2 Cup flour for Kneading.
3/4 Teaspoon Salt
2 Tablespoons Olive Oil
Add Yeast. Stir and knead all for 4-6 Minutes. Place in a greased bowl and let rise in a warm place for about 30-45 minutes. Punch down and let rise again, or start rolling it out.
- Roll out your dough thin and form a crust to hold the egg mixture in.
- Crack 3 eggs in a bowl with salt, pepper and 1 cup milk.
- In a small jar, mix 1/2 cup milk & 2 tablespoons flour, shake well getting all the lumps out, then add to egg mixture & blend well.
- Add two cans of diced green chilies (drained), OR use whole if you like.
- Add one ball of mozzarella cheese. Can substitute monterey jack or mexican cheese.
- Carefully pour the egg mixture over the chilies and cheese.
- Add Green Onions
- Put in a preheated 400 degree oven, on a stone preferrably. I had a cave in on one of the sides, will make the crust a little thicker next time.
- Cook until nice and brown and bubbly, approx. 15-20 minutes. Egg mixture should be firm and not mushy.
- The finished product. Egg mixture firm, thin crust. Yum!
All in all a success. Anyone looking to improve on my first run, would love to hear your results! What I would do differently, is better crust, more salt on the toppings and I dunno, maybe olives =).

Sunday, August 16th, 2009I am taking down cookingwithjenny.com. Never kept up with it, I just have too many things on my plate. Going to transfer all the recipes over to here and then if I ever feel like posting one, I will just do it here. Like today. I was craving pizza and chile relleno, so I thought of a Chille Relleno Pizza. Googled it. Nothing. Can you believe that? I thought I was spelling it wrong, but I wasn’t and couldn’t find one recipe. So I made one up. It came out good, will post it.

Sunday, August 16th, 2009I am loving this hot sauce!! We frequent Sakura Sushi in Germantown, TN, and while we were walking out of the place, I saw it on the counter, then was shopping the next day and picked it up. This is what they use on the spicy tuna rolls. They also mix it with Mayo and put it on the Joyce roll, OMG, so good!! I put it in a garlic mayo for burgers last night, it was great.
Garden Update
Friday, August 7th, 2009Well it’s been 80 days since we planted, most items should be able to be harvested by now, but some are slow going. Have been able to have some though, we have enjoyed the best tomatoes I have ever eaten, so sweet and suculent. Last night’s dinner, I made spaghetti carbonara and put squash in it, it was awesome.
Took some pictures this morning, the garden looks pretty good for the most part, broccoli is history, corn still have fallen over, but is hanging in there.

Yummy Pizza
Saturday, August 1st, 2009Made my best pizza yet today! Sorry no pics, I didn’t remember to take one and now it’s too late, all gone! Thin crust, had mozzarella cheese, pepperoni and on my third, onions, bell peppers and basil leaves. It was scrumptious.
