Life is back on track..

thanks to a couple changes in our lives, we are now getting our lives back on track. I am getting more work soon and Dave got a promotion at work. He gets a brand new work truck and all, it’s very exciting. Just what we needed to get the ball rolling again. Dave this weekend is working on building us a front deck.

Yesterday I worked for hours on a debt payoff plan. I love doing this kind of stuff, if anyone out there would like me to help them get their finances in order, let me know. I come cheap, no money up front. heh.

I am not ashamed to say that we are $33,000 in debt. Doesn’t include cars, houses, etc, just credit cards and personal loans. With my new debt pay off plan that is going to begin on Oct 1, we are going to drop an extra $1000 a month towards our debts. Using the snowball effect, we will be debt free by December of next year. So what’s another 16 months of sacrificing and not getting out much, I am so in.

Looks like we could get some fall out from Gustav, the last evacuation bus left at 3pm today. Scary stuff, I hope everything will be ok. A lot of evacuees came to Memphis. BACK OFF GUSTAV!!

Yawn, it’s late, can’t sleep, Nyquil isn’t working. Been sick for days, serious flem issue, I sound like I have been smoking for years. Dave too oh but wait………lol

Watching the Olympics, Nastia just got screwed for the Gold, she deserved another.

Phelps rocks. Dara Torres too.

Those trampoline jumpers are crazy, I have never seen that before, why is that.

Dave got a promotion at work. yay

I might get my car back full-time again, woohoo

Reading The Other Boleyn Girl. Book is so different from the movie, I am trippin.

Batman was super good, I loved it.

Molly meows at me when I sneeze. So cute.

Pam Anderson’s Non-reality TV show is weird, although I find her intriguing. I like Denise Richards much better.

Jenny’s Country Ribs

For today’s recipe, I chose these country ribs, mostly because they were on sale.  You could use this recipe with any kind of pork rib, baby backs would be divine.  If you have a larger batch than what I am doing, you will need to increase your measurements on the rib rub and sauce.

Rib Rub Ingredients:

  • 1/2 Cup Brown Sugar
  • 1 Tablespoon Chili Powder
  • 1/4 Teaspoon Chinese Five Spice
  • 1 Tablespoon Onion Powder
  • 1/4 Teaspoon Cayenne Pepper
  • 1 Tablespoon Garlic Powder
  • Olive Oil (Not pictured)

Preheat your oven to 250 degrees.  Get your ribs all washed up, dried
off and sit to the side.

Mix all your dry ingredients together, I use a sifter to help get the clumps
out.

Put a splash of Olive Oil on the ribs and get them all rubbed down with your spices. You can do this step the night before if you like, just make sure you let me rest before doing this next step.  While resting heat up your pan on medium high heat for about 5 minutes.

Brown the ribs on each side.

Place ribs in a baking dish.

Rib Sauce Ingredients:

  • 2 Tablespoons Honey
  • 1 Cup BBQ Sauce any kind, not sweet
  • 1 Tablespoon Hoisin Sauce

Mix all your ingredients together real good.

Pour over top of ribs, reserving some for dipping later if you want.

Pop in the oven for approx. 4 hours.

Delicioso, I served mine with potatoes and corn.

Tuesday Weigh-In and Measure

Got on the scale this morning and I weighed 134. How exciting is this, actually a pound less than my goal! So I thought why not, break out the measuring tape and just see how much progress I have made. It’s been roughly 4 months, I lost 13 pounds and a total of 8.5 inches. Not bad for not really dieting.
