hey hey

hey hey what up. Summer is officially here, been in the 100’s every day. My poor baby has to work out in it every day. I am indoors constantly with the A/C set just right. =) As soon as it starts getting cooler, I will venture outside and pick up my running again. Whats that you say? Get outside and run before it gets hot? Honey, the heat index was 92 when I woke up at 7:30!! And here, there is no cooling down at dusk, the heat and stickiness just lingers around forever and the bugs are horrendous!!!! I swear there is one horsefly out there that just waits for me to come outside so he can torment me.

Lots of good things in the works, don’t want to spill the details quite yet, but I’ll just say that our businesses we are starting have great prospects and that things are looking up for us! For me, I am finally over my work drama from months back, things are on track and I am very excited at the direction my life has taken. A great big thank you to D.A. for changing my life forever.

Our garden is still somewhat going. Bell Peppers, tomatoes, cucumber, watermelon are all thriving. Our corn went to crap, we haven’t a clue what happened. The one time we tried it, it didn’t have any flavor whatsoever. We think maybe it was feed corn. ick.

What else good is happening…… we keep selling junk we found around our property, the last vehicle went last night, 700 bucks, woohoo!! The place has really cleaned up nicely and good that we are making a little money, because our property must make 1500 bucks a year, or we lose our Greenbelt status. No pressure really.

Cats are good, dogs are good, I love Red, he has stuck around and been a fun and protective addition to our family. Yesterday, a car came onto our property, but quickly realized he was trespassing and drove out. The car was already gone and I looked over in Red’s spot where he sits and he was sleeping and didn’t notice the car, but seconds later, he popped up and went running in the direction of the car, smelling all around and went exactly where the car was. He must be a hunting dog or something. Also when he hears a gunshot, he goes running towards it. Love him.

Overdue Weigh-In

So I hopped on the scale this weekend and I have reached my goal weight!!! Well not anymore. I weighed 135 on Saturday and I am 136 again this morning cuz I pigged out yesterday! But I am teetering and I am super close!

Garden Update

Our garden is pretty much belly up. There are a couple salvageable things, but it’s not looking good. We have what seems to be a rabbit eating all our stuff!! Not one pepper plant I planted has been able to grow, 4 total. Broccoli and green beans never had a chance. Corn we had last night and it wasn’t very good. Tomatoes are acting weird and actually look weird coming in. We have one baby watermelon, not sure how long it will last. Squash, basil, italian parsley and zucchini all good.

Next year we will be better and I am going to do something about those pepper plants!!!

Jenny’s Mac & Cheese Recipe

Was just fooling around in the kitchen tonight, wanted to make scalloped potatoes, but the potatoes were bad.  So I drummed up this recipe.  Dave and I both agreed it was better than Paula Deen’s Buffet.  hehe

Ingredients:

  • Water
  • 1/4 Package Macaroni
  • Tablespoon Olive Oil
  • Tablespoon Butter
  • 1/4 Cup Shallots (Onion is pictured, use either)
  • 2-6 Cloves of Garlic, Pressed (I like it strong)
  • 1 Sm. Can of Mushrooms or 1/2 Cup of Fresh
  • 2 Tablespoons Flour
  • 2 Cups Milk
  • 1 Chicken Boulion Cube or Sub 1 cup chicken stock for milk.
  • Dash of hot sauce
  • 1 Cup Cheddar Cheese
  • Salt and Pepper

Sorry there aren’t anymore pictures, they didn’t come out for some reason.  Start boiling your water for the mac.  In another pan, over medium heat, add oil and butter and saute shallots, garlic and if using fresh mushrooms cook until shallots are opaque.  If using canned mushrooms add now with the flour and cook for a couple minutes.  Add your milk and cook until nice and thick.  Put your macaroni in the water while adding the cheese to your mixture, salt, pepper, hot sauce and when the macaroni is done, add it all together and let stand a minute before serving.  Bon Appetit!

Jenny’s Baked Chicken Recipe

Yum, baked chicken.  Was always a favorite growing up, my Mom always made it so good.  Now it’s my turn!

Preheat the oven to 375 degrees.  Put the oil and butter in a pan and put it in the oven while it’s preheating to melt the butter, set a timer so you don’t forget.

Ingredients:

  • 3-6 Chicken Thighs
  • Tablespoon Butter (Not Pictured)
  • Tablespoon Olive Oil
  • 1/2 – 1 Cup Flour
  • 1-2 Tablespoons Seasoned Salt
  • 1-2 Tablespoons Chili Powder
  • 1-2 Tablespoons Garlic Powder

Mix the flour and spices in a plastic baggie.  Take the pan out and add the chicken skin down.  Cook for 25 minutes on each side.

Happy Hump Day

What happening. Been away from the blog scene for the last week or so. We went to Tunica, MS for a couple days, it was nice to get away, but the main thing I wanted to do while there was eat at Paula Deen’s Buffet at Harrah’s Casino.

We got a nice room and comped for one night which was nice. We went to Paula’s the first night and it pretty much set the tone for the remainder of the trip, WHICH WASN’T GOOD. The food was horrible, overcooked, under seasoned and made my poor belly hurt so bad, oh my goodness. We were miserable for 24 hours after. Very disappointed. Oh and the ranch dressing on my salad was nasty. If you can’t get the dressing right, then you shouldn’t be in business. Was there anything good to eat????? hhmmm, dessert, oysters, although pretty sandy, bread rolls were yummy. The mac and cheese was horrid!!! Very unpleasant experience. The place is real cute though.

The best salad I have ever had, (sorry Sheri) was at this place next to Paula Deen’s called Replays Sports bar. The salad came with several different types of lettuce, spinach, mixed greens, huge chunks of bleu cheese, yummy tomatoes, those little corns, cucumbers, croutons. I am getting hungry again just thinking about it.

We went to the Tunica Riverpark which has a museum about the Mississippi River and surrounding areas. It was quite interesting, they even have a live aquarium in there. None of the pics of the fish came out good, but here are a couple others.

Firefox Display Issues/Problem with Sidebar in Wordpress Blog

ok, who uses Firefox? I stopped with IE a week ago, haven’t had any errors, love it. This is the first time coming to my blog since I started it and now all sidebars show up on the bottom of the blog instead of on the side. If I go into IE, it’s fine, no problems. I have tried lowering the column width, widening the body width. My CSS is valid, no errors. Anyone know what’s up?
