I just got done making Corned Beef Hash.  Brought me back to the days of being at my Grandma’s and her making it for me.  The smell of the onions cooking and how she always set up the table, making sure I had a glass of milk and cabbage on the side with her special sweet and sour sauce.  Oh I love you G and miss you so much.  Miss our days of playing games together and emailing when we were far away from each other.

Yay!  Guess what came in the mail today?????  Our COBRA insurance stuff, can you believe it?  Only 16 days late by law, but at least we got it.  And the best thing out of this whole ordeal, is that we dont have to deal with our ex-employer for anything ever again, woohooooooooooooooooo, let’s party.

Is everyone off today?  I feel guilty for not working, so may get in a couple hours later, but so far this morning, I have done the dishes, started the laundry, made rib rub and just rubbed down a rack to sit for a couple hours before I put them on.  Yummers, can’t wait, we will be smoking them later with apple wood.

Picture of the ribs down below with the others……Beth, I made an extra batch of my rub, will be sending it your way or maybe we can meet at Panera for lunch.

Dave is going crazy with this new contraption he bought for cat hair, called The Pledge Pet Hair Pickup.  It’s a great product as long as you tweak it.  They made it to where you have to throw it out when it gets full and buy another.  Yea right, with all the hair in our place that wouldn’t be smart, so he cut a hole about an inch in diameter and sucks all the hair out with the vacuum cleaner, then puts tape over the hole while in use.  Pretty cool, now the thing will last and last!  My hubby is so smart.

It’s only been a week since we planted the garden, check it out!

Update later: added finished ribs, they turned out great!

 
 

American Idol Wednesday, May 20, 2009

Normally don’t watch the show, but have been checking it out this season.  I like how theatrical Adam can get, he can be totally girly one second then tear it up like axle rose the next.  My gut tells me that Kris will win because he is a good, down-home christian boy, but who knows!  I vote for Adam!

What we planted

So I guess I forgot to mention what we planted!

Cantaloupes, Watermelons, Mix of all colored Bell Peppers, Habaneros, Jalapenos, Anaheim Peppers, Thyme, Basil, Catnip, Italian Parsley, Cilantro, Brocolli, Green Onions, White Onions, Celery, Carrots, Sweet Corn and two type of tomatoes.  Besides the catnip and the fruit, we wanted to plant this year everything I buy at the store on a weekly basis.  Only thing I forgot was garlic.  O’well, maybe next year.

Still no news on the insurance.  Still no sign of my stamps.  lmao.

Been out in the garden for the last 5-6 hours!!! Dave tilled and made the rows and I came in behind him, making holes, filling holes with garden soil, planting the seeds, etc, then Dave hammered in stakes in the ground, and I stapled all the seed packages in plastic baggies on the stakes to identify them all. Fun stuff. We have been putting off this day for a while, should have started the planting weeks ago! Here are a couple pics of it, also of Red, my pizza from yesterday and Chewy’s grave. =(

Been a great one so far!  I have spent a good deal cooking, made pizza for lunch and spaghetti carbonara for dinner.  All turned out good.  Brownies the night before, yum.

It’s a blockbuster weekend here, watched Changeling and Benjamin Button, both were excellent.  Next up, The Children of Huang Shi.  Crappy weather here, so nice to have been lazy for it!

Still no news on the insurance. =(

Woke up having the worst morning!!  Major tummy pains, sick, omg, hurting so bad.  Brought up all the drama that we are going through with our health insurance.  The ex-employer is supposed to send COBRA stuff to us, it’s 3 days until the deadline.  We have been patiently waiting for 41 days without insurance, this is bullcrap.  I hate to think about it, but it is really going to suck when we wake up on Monday morning and it’s not here.  We have been going through enough drama that we don’t need to add government agencies and an attorney to the mix.  BUT, we will if we have to.  Insurance is a must, no getting around it.  Is there any insurance carrier that will take pre-existing conditions?  I haven’t found one, but boy oh boy wouldn’t it be nice if we could just get insurance somewhere else and not take COBRA, I would do it in a second.

Hope everyone’s day is better than mine. =)

Up Late, Can’t Sleep Friday, May 1, 2009

Storm is just about it hit, crazy thunder and lightening going on.  Already been in bed for an hour trying to sleep and wasn’t getting anywhere, so got up.  Planning for my big cooking weekend ahead.  I am making cowboy chili, pizza from scratch and fish tacos.  Can’t wait.  Kind of a lot of food in one weekend, but I don’t care, craving all of them, so going to hook it up.  Will freeze half the chili for later, yummers.  So I cooked for the first time last week, a flat iron steak.  It was the most tender cut of meat I have ever had.  Melted in my mouth, oh my goodness it was delish.  We are used to flank, asada or skirt steak and can’t find any of it here, so grabbed the flat iron hoping if I cooked it right and cut it right it would be great for burritos, and I was right, it was fantastic.  Will use the same cut in my chili this weekend, yum, I am hungry now.

We bought Dave a truck yesterday, a beater that seemed to be a great bargain until we got 5 minutes from the house and it broke down.  Just our luck, had to have it towed.  It’s at the shop now getting looked at, hope to know something next week.  Always something isn’t it.

Anyone besides Sammie twittering yet?  I get the facination if you lead an exciting life, but who the heck wants to know what I am doing all day?  B-O-R-I-N-G!  lol k, off to bed.

It has been crazy the last month or so and I haven’t felt like sharing……………….until now, look out!

Been a challenging last month or so. Dave lost his job from the same jerks as I did last year. Can you believe it, on the one year anniversary almost to the date! Almost like they planned it. But don’t fret, we are great.  Not even as stressed as we were last year. Thank God my business took off and I am able to support us. Barely, but it’s all good. Lots of challenges ahead. No health insurance right now. Did you know that an employer can wait 44 days to let you know if you can have COBRA coverage or not? It is ridiculous. And I know what it’s all about in this case. A bookkeeper who procrastinates and does things on her time. I saw it in action myself while working there. No care to the fact that people need coverage and are actively seeking medical treatment. So now life is put on hold until we hear. The bright side of it all. No more pain in the ass employer in our lives anymore. I can’t tell you how good it feels to be done with those people.  They are liars, cheat their employees on overtime pay and wouldn’t know what it was like to run a “family” business if it bit them in the ass.  I know Mom, not the professional way to act, but I don’t care.  I have kept quiet for years, watching them screw their employees, not fair, not right and it pisses me off that companies get away with this shit.  They will get what’s coming to them and we are free from them finally, woohoo!!

We miss Chewy so much, and decided that we will get a puppy. It will help Sugar in her old age. Not actively looking, but if we see a free sign anywhere, we will look, or may go to the pound one day.  Red has turned out to be a fantastic dog.  He rarely runs off anymore and obeys us better than ever.

Summer is almost here, temperatures are rising.  Dave started tilling the garden, hopefully we will be ready to plant the seeds this weekend.  I know we are lagging, should have had this done weeks ago.

We need to get a truck for Dave.  He doesn’t have any plans to get a regular job again, he started his side business a year ago, and has had one customer that he does repeat business for this entire time, but hopefully soon he will get more work and get his feet off the ground like I did.  Leaving the employment world was the best decision I have ever made, I hope he has the same success.

I have been studying lately.  I am going for my Certified Bookkeepers Certification.  I have one book to go for my first test.  All about adjusting entries and mastering correction of accounting errors.  Loves it!

You know, I never did find my darn stamps.

What else……..life is good.
